When healthy isn't yummy

Sometimes I cringe at the amount of sugar that so many recipes call for. Case in point: 2 cups of sugar for 28 cupcakes, which translates to approximately 14 grams of sugar per cupcake. Too much but sooo good that it's bad. Am I making any sense? So I've been on the hunt for a healthier chocolate cake/cupcake recipe that tastes and feels like the "real" thing, or at least something close enough.

Sadly, this recipe did not deliver. The cupcakes did not taste like chocolate at all - they were bland and practically inedible that I had to smother them with chocolate ganache just so they didn't go to waste. I don't know if they were supposed to taste like that or if I did something wrong. The only good thing about them though is that they were really moist. One thing's for sure - I'd rather eat and savor one 14g-sugar-laden cupcake that's pleasurable than ten of these.

Flourless and Sugarfree Chocolate Cupcakes
Recipe from The Healthy Chef, makes 12 cupcakes
Ingredients
  • 1 ½ cups (150g) almond meal / ground almonds
  • ¼ cup (21 g) unsweetened good quality cocoa powder
  • 1 tsp gluten free baking powder
  • 2 free range/ organic eggs
  • 1 tsp vanilla extract
  • 60 ml (¼ cup) macadamia nut oil, light olive oil, avocado oil or cold pressed coconut oil (I used avocado oil)
  • 60 ml (¼ cup) your choice of milk - dairy, almond, or soy (I used almond milk)
  • 2 tbsp honey, maple syrup or rice malt syrup (I used raw honey)
Instructions
Preheat oven to 160 C – fan forced. 180 C no fan.
Combine almond meal, cocoa powder and baking powder.
Add the eggs, oil, milk and honey then mix well to form a smooth batter.
Spoon into 12 small individual cupcake tins.
Bake for 25 minutes until puffed and cooked through.
Serve alone or topped with chocolate frosting or raspberry sauce.
