Strawberry Lemonade Mimosas

Ditch your cup of coffee for this sparkling drink on a hot summer day.

Giada tempted me to make this. I was watching her show on Food Network and she made strawberry basil mimosas. My version does not have basil in the mix but it is as crisp with a punch of bright and cheerful pinky coral color, and it will give you a different kind of buzz to jumpstart your morning.

According to Wikipedia, "[a] Mimosa is a cocktail composed of one part champagne (or other sparkling wine) and one part chilled citrus fruit juice, usually orange juice unless otherwise specified (e.g. a grapefruit juice mimosa)."

I blended some strawberries with lemon juice and simple syrup to make the "fruit juice" part and used prosecco, a sparkling white wine from Italy. You can use whatever juice you have and if you don't like the thicker texture of blended strawberries, you can use only the juice from the strawberries and blend it with the lemon juice. You can also use champagne instead of the prosecco.

One important note: make sure to have this with some food, OK? A hearty brunch or a big breakfast. You don't want to get drunk so early in the day. ;) But if you do... well, be responsible. :)

As I was editing this, I remembered a happy something. My close friends Shine, Kae, and I went to Tagaytay and Batangas with "the Spartans" one weekend way, way back. Right after graduating from college perhaps. (Oh my God, that was like 7 or 8 years ago!) It was an overnight stay and of course, booze had to be part of the package. We were young and wild and free after all. The morning after, we had leftover vodka and orange juice. Somebody (I forgot who) wisely suggested that we mix the vodka with the orange juice for breakfast because wasting food AND booze is just not an option (maraming nagugutom, bawal magtapon ng pagkain).  We called it "spiked OJ." Ahh, memories! Good times. :D



Strawberry Lemonade Mimosas Print Recipe
Recipe inspired by Giada's Strawberry, Lemon, and Basil Mimosa, makes 2 glasses
Ingredients
For the Strawberry Lemonade
  • 1 cup fresh strawberries
  • juice of half a lemon
  • 1/4 cup simple syrup* (equal parts sugar and water, sugar dissolved in the water)
*If you don't have simple syrup, use a tablespoon of sugar. Adjust according to your liking.
For the Mimosa
  • 1 cup (250 ml) chilled strawberry lemonade
  • 1 cup (250 ml) chilled prosecco or champagne
Instructions
Make the strawberry lemonade
  1. Blend all ingredients together in a blender and chill. If using sugar instead of simple syrup, make sure the sugar is completely dissolved (you can't feel the granules anymore).
Make the mimosa
  1. Pour half a cup of the chilled prosecco or champagne into each glass. Then pour half a cup of the strawberry lemonade over each glass. Mix.
  2. Garnish with strawberries, if you like. Enjoy!
  3. Drink moderately. :p
